Agave Macho Mezcal

Agave Macho is a small batch mezcal artesanal, a spiritual tradition, an elixir representing a region, and a family business. The Agave Macho line consists of ensemble blends of at least 7 local agave varietals, all grown and harvested wild from the communal lands.  All ensembles are created with a common base of 50% Espadín and 50% rare wild agave.  Specialty releases consist of pure expressions of wild agaves. Agave Macho only harvests maguey varietals that are mature so varieties are subject to availability.

Mezcal is steeped in tradition, and made exactly the same way for hundreds of years.

In Oaxaca, the heart of Mezcal production, the people of the land, or compañeros, have been working with various forms of fermented agave since the time of Aztec, Mayan and Zapotec empires! Agave Macho is produced in San Isidro Guishe, a rural pueblo in the famed Miahuatlan of the Sierra Sur mountain range in Oaxaca, a region plentiful with native agaves and spring water. This 3,500-acre rancho is home to a 'collectivo' of small palenques who have been working together to make artisanal mezcal since 1931. Agave Macho is produced at Cavas Don Roman y Co.

Connected to the land by roots that run deep.

The mature agaves are wild harvested from the local region. The agave gets slow-roasted in a large conical pit in the ground, fermented naturally in wooden vats and distilled in small copper stills. The mezcaleros are in touch with the growth cycles of the agaves they have known their entire lives. They are dedicated to sustainable harvest and replanting, and semi-cultivation of the most abundant agave, Espadín
